Does this engine use the metal shim gasket under the carb ? If so do i use any other gaskets with this shim gasket ? This is the stock 803 intake manifold with the stock 219 carb. Any idea's why chevy used this shim? Thanks in advance.

Yes, the stainless steel BAFFLE is used in conjunction with a composition-type gasket with steel core. The gasket goes on the manifold first, then the baffle, and then the carburetor.
The baffle separates and protects the carburetor from the hot exhaust gas which passes through the heat slot at the front of the manifold flange. Your best bet is to disable this heat slot by plugging the holes on either end of it. Then, the baffle is not so important, but I'd still use it.In Appreciation of John Hinckley- Top

There should be no slot in the steel baffle, even for 68-69. The slot is in the manifold flange as well as the gasket. I don't think any baffle was used after 1969 since Chevrolet wisely abandoned the use of the heat slot carburetor heat system although some applications did use a combined gasket and heat shield that extended beyond the carburetor flange. I don't know that the later gaskets will work properly for 1968-69. They might but I would not count on it. I certainly would not use them to block the heat slot system. Use the plugs for that; the drive plugs are quite easy to install with the manifold on the engine. Then, just use the stock 68-69 baffle and gasket.In Appreciation of John Hinckley- Top
