Would a 1961 buiild date of January 4, 1961 be considered a "Late" car or Early?

It dependa on what component/s you are talking about. As a whole car, it is neither early nor late.

Replacing the fuel tank sending unit. The unit I received says " L61-62".

early is a threaded compression fitting, late is a slip fitting with hose clamp, see which one your car has and order accordingly. my may car has the late one.

I have a late January 61 with compression fitting and a May 1961 that does not.
