Not familiar with a truly "fail safe" thermostat. That would be quite a feat if it could be done. That said, there is one on the market that will only fail in the open position - apparently the standard or at least most thermostats fail in the closed position. The benefit is quite obvious.
They are sold under the brand name of "FlowKooler" - I think Summit carries them. And, you can get them in a number of temp ranges - I got a 180 for my '64.Ed- Top
