Not to get this thread (too far) off topic but I think your biggest challenge is going to be developing a renewable source of brake system parts.
The old finned drums and Velvetouch shoes you have will work perfectly, but both will be consumed by the stresses of racing. It would be a shame to wear out an original set of finned drums. You need alternatives.
I've seen successful racing brakes based on NAPA 4401248 drums. These aren't a turn-key replacement for your original finned drums; they will require machining (at a minimum to prevent the outer drum lip from hitting the upper A-arm) and careful alignment (to ensure the 2.5" shoes contact the available friction surface). Other re-work may also be needed.
For brakes which use standard backing plates, NAPA 4401575 are a good choice. With these, it's nearly trivial to run 2.25" shoes. These are heavier than the original finned drums so there is plenty of "meat" to absorb the heat of severe braking. Because your car already has big brakes, you won't want to use these, but they may be interesting to others.
I've seen successful use of Carbotech shoes. You send them your cores and they re-line them with their friction material.
Axles and hubs are also a weak link for C1 racers. You'll probably want to replace the axles with some stronger aftermarket pieces. For front hubs, have several spare original late hubs and have them crack checked. Avoid the early hubs entirely.
