71 Hood Latches on or off for Body Work and Paint???

I am getting ready to send the body from my 71 roadster to the body shop. I have just installed a new complete front end and have fit the hood the best that I can. The body shop will now have to do all final filling and prep. My question is should the hood have the latches on or off for them or can I just make some blocks to hold the hood to the correct postion for them to do there work? We're the cars originally painted with latches on?
    thanks

no over spray on the latches, the only overspray would be the black out on hood hinges and slight overspray from the body color on the edges of hinges.

Hood was propped up slightly (maybe a 2x4) for paint. For black-out (which followed color) hood was held open with a overhead hook. I am not sure about latches on hood, but latches on the body were not in place for either operation, and neither was the hood prop.

PS: Mind the margin on the hood between blackout and body color. It requires some thought and proper process to make it look TFP.
