NCRS judging for unrestored cars is actually called Star/Bowtie judging because a car earns a star in each of the four sections. It does take all four for a Bowtie Award, but it is not an all-or-nothing scenario. There are one-, two-, and three-star plaques.
Based on what you say, the car has already lost the exterior and probably interior. But there is nothing to be ashamed of with a 44-year-old two-star car that has been enjoyed for all those years. To echo what others have said it is only original once; think carefully before you destroy all that. I would wait and see how much you have gained with improvements this year.
