I have a 1969 L89 Corvette. The heads are dated the end of August and the block is the first week of September. The engine was assembled on the 5th of November and the car was built the 22 of January. These dates seem far apart, I was wondering if it is because they only made 360 of these cars that this could be the reason for the added time between built and installed.

I think you have nailed the reason. If the transmission is M40 it would be no surprise at all.I have a 1969 L89 Corvette.
