I need to restore the intake manifold during a rebuild. Someone painted it silver in the past. The plan is to get it tumbled. Should the splash screen come off? What about the heater and water pump fittings... I've heard they can be hard to remove

I'd send it to Jerry MacNeish for restoration. It will come back looking like new.
I recommend removing the oil splash shield. It's easy to do. The drive pins can be carefully removed. For re-installation, drill and tap the drive pin holes for machine screws. Then, install the shield with screws for retention. Use Lock-Tite on the screws.
The waterpump and heater fittings can be left in place if they're in good condition. Usually, they are not, though. Jerry MacNeish will remove them for you for an extra charge. And, yes, they can be EXTREMELY difficult to remove.In Appreciation of John Hinckley- Top
