1974 454, what kind of pistons does it have, flat, dished or domed? How can I raise the compression to 9.75?

I have no idea. I'll have to talk to the shop that's working on it and see if they can tell me.

Original pistons were flat top with 2 "eyebrow" style valve reliefs.

Assuming that you have stock 113 cc heads, installing Keith Black pistons KB201 or KB203 will give you close to the compression ratio you seek.
