I have a pile of these, and they all wrap the exact same way from the left like Matt's picture on top.

Enclosed are photos on my original 1966 jack spring asm. (GM # 3785772) that was used on 1965-1968 Corvettes.
          spring O. L. = 4 1/2" w/54 coils
          coil length = 3 1/2"

Doesn't the 66 JG say the 66 spring has one loop?

Yes it does, on p. 41.

The 1966 AIM calls out GM 3785772 Spring Asm., on UPC 10-A5. That part number is the same from 1963-1967 for both single-hook and double-hook Jack Springs.

The AIM drawing is of a single hook in 1963-1964. The AIM drawing shows a double-hook for 1965-1967. There is nothing in any of the Revision Records (1963-1967) regarding the Jack Spring to indicate when the change took place. The caption over the Jack Spring blueprint showing the double-hook in Adams p. 267 says the revised Jack Spring "was also added on 10-19-64".

Don't the judging guides usually have a lot of errors in them?

Correction to my previous post (#21), the 1965 AIM Revision Record DOES note the change to the Jack Spring, the Revision Record symbol "4" inside a circle is located on the drawing itself, but not next to the Jack Spring item number at the top of the page. The Revision Record notation says: "Spring Drawing Revised", AIM date 10-19-64.

To make the story more confusing, what I believe to be the original spring and hook on my July build date '66 is the one hook design. And in talking with all previous owners of my car, no one recalls or admits to ever having changed the spring and hook for the earlier style. So, maybe the one hook language in the '66 TIM&JG is at odds with the AIM and maybe some view it is an error in the JG, but I'm liking the one hook possibility for '66.
