In the case of the '78 Pace Car with the leather/cloth interior--does the cloth cover the entire back and seat of just below the to bolster on the back and not to the full length of the seat? Also, If you have the option of the leather/cloth seats is there some difference in the door panels/

I've got a Pace Car cloth seat out of the car in the backroom so I believe I can answer your question but not sure I understand what you're asking. This is tough to describe without photos.
It's an insert that stretches from where the bottom seat insert is stitched to the leather that surrounds it up to the head rest. At the head rest, the cloth is rolled to the backside where it is stiched to the leather to secure it to the seat side leather components. At the backend, the bottom insert (seat) cloth is stretched to the backside of the seat and stitched to a leather strap that is stitched to the leather bolster sides...not unlike the headrest cloth insert.
