Sounds like you're making good progress and I'm happy to hear you're drying out. Regarding your questions . . .
Al Knock is a well known supplier/manufacturer of reproduction carpet. I would recommend going with his product and reading the archives on how best to install new carpet (tons of posts in the archives).
The plug on the rear differential is located on the right side (passenger side), kind of above the spring and half shaft. I have found it easiest to do this job when the car is on stands, level, and the right rear wheel if off the car. Check your service manuel for details.
As far as treating the floor pans with a mold inhibitor, I'm not sure. I would think some sort of bleach solution would work - but others may have a tried and true method.
