When I first start up my 350/350, I push the acccelerator down once to activate the choke and it starts however the idle speed is about 2500 and then when it warms up and I kick it down it idles just where it should, around 700 and will continue at that speed all day at idle. My question is this, the 2500 just seems awfully fast for the intial startup with the choke on, should it be this fast?

My memory of the 1970 350/350 (L46) is that is about what the book says. I would suggest you look up the fast idle specification in your copy of the 1969 Factory Service Manual to confirm my recollection.
That said, given we usually don't start our Corvettes in sub-zero temperatures you can reduce the high speed idle easily if you wish. The instructions, complete with photographs for those of us who respond better to visual stimulus, are in the same 1969 Factory Service Manual.Terry- Top

You are very close. The Ops Manual & PV Test Guide calls for 2400 on the 69 L46. It is very easy to turn the fast idle down for summer driving and back up for judging.Larry

those RPMs listed in the GM manuals are for a engine already up to temp not cold start.- Top

If the book setting is like my 63 and 67 engines, as Clem states it's with a warmed engine. There will be quite a difference in engine speed when it's cold (slower).
Also, this is usually set on the first or second step of the cam which sets when the choke is completely closed. After start up and after the choke pull off opens the choke valve usually you can touch the throttle and the step will lower and slow the idle.- Top
