Just wanting to know how much different my 65 Coupe would sound if I had the side exhaust removed compared to the factory exhaust. Is it a big difference or subtle in the exhaust "note."

There is a huge difference between the sound of the two exhausts. The side exhaust is much, much louder than a factory style exhaust under the car. Having had both on midyears, I personally prefer the sound of the side exhaust. More muscular and loud but many prefer the quiet sound of the factory under car exhaust. Both are distinctively Corvette.
It's all in the ear of the beholder.
