What type of putty is used on '61 door to hide the adjuster bolt below the door pillar? I assume it is painted the body color?

Personally, I don't believe putty was used to conceal the door post adjuster bolt. Every car I've ever taken apart required a die grinder to remove what I'm sure was resin.
However, without getting into that, the putty or "dum dum" can be purhased at plumber supply stores or Home Depot. I use 3M strip caulk. It comes in white and black.
The area received a brush applied application of body color paint. Often there is evidence of a small amount of paint on the weatherstrip adjacent to the filled area.

First there was putty (dum-dum) that covered the adjusting bolt almost to the level of the area surrounding the hole. Then a resin-like hardening material was spread over the top of that. It was then hand touched-up with body color.- Top
