What type of plug is correct for the top of the 75 Water Pump. There is the type with a raised hex head and the type with an Allen recess?

The originally installed plugs were an EXTERNAL SQUARE HEAD pipe plug. These things are so "funky-looking" I'm really surprised Chevrolet ever did it that way. But, that's what they did.

When using a waterpump with an unused external bypass, I much prefer an INTERNAL HEX HEAD pipe plug. However, these were not originally used.
