'61 Temperature

On a '61, 283/230 -carb, what should the max temperature range be at idle after the motor is fully warmed up? Mine is getting up to around 200 while sitting still, reading the temp sending unit with a IR thermometer. The dash gauge is reading over 220, but I have no idea that the gauge is working properly. I am using a new sending unit.

I wouldn't consider 200* (actual) to be unusual under extended idle conditions, as long as it stabilizes around 180*-190* going down the road.
