How do I find out the proper and original valve cover style for my ‘58 engine? I’m new to NCRS so not real comfortable navigating this forum.

Welcome to the NCRS! I would suggest you purchase the 1958 - 1960 Technical Information Manual and Judging guide. It has a wealth of information and will answer many questions along with your valve cover question. You can purchase it in the NCRS Store at the link below.
National Corvette Restorers Society! 1953-62 NCRS Technical Information Manual & Judging Guides - Where does 48 years worth of detailed Corvette research by the experts in the Corvette Hobby go? In these books. The new editions are GREATLY expanded at 200+ pages and well worth the additional cost. The 1953-55 238 page color 7th edition is now available. The 338 page 1961-1962 Tech Manual is NOW AVAILABLE! The 352 page 1956-1957

Welcome to NCRS and your Tech Board!
As Rick suggested, you've ordered a 1958-1960 Technical Information Manual and Judging Guide (TIMJG).
I suggest you also order a Corvette "Judging Reference Manual" (JRM) - applicable to all years. 9th edition
TIMJG tells you What to Judge.
JRM tells you How to Judge.
Very first section of JRM is an Owner's Advisory. That Owner's Advisory section will likely answer many of your questions about Flight Judging - Preparation, Removal of Parts, our Judging Points System, Disputes, etc.
If your car is unrestored, then you should also read Section 9 (starts page 62) preparation for "Bowtie" cars.
Following "Owner's Advisory" is a "Judges' Advisory" section. Read that and learn what your judges should be doing.
