The clutch pedal in our 1957 gets stuck on the floor. What could cause this?

As mentioned above, go through the adjustments for the clutch in the ST-12. There is an adjustment in there for the overcenter condition you are experiencing.
I suggest following the instructions for check out and adjustments as written in the ST-12 carefully.- Top

Happened on my 60 also Wrong clutch assembly I had an extended fingers pressure plate and with the "OVER CENTER PIVOT" of the linkage it stuck several times. Once at 6500 RPM OUCH Changed to a regular assembly --- NO MORE ISSUES!!!Founder - Carolinas Chapter NCRS- Top

Salvador, We need some history....
Is this a new clutch, or is it a older clutch that has been working but now has this problem?
If new, exactly what was installed?
If new, is it a bent finger or flat finger modern disk or Borg & Beck 3 finger?
What height throw out(release) bearing was installed?
Is the clutch fork and rods/linkage/pivots/overcenter(Gorilla)spring all stock or modified?
Is the fork a proper C1 58-62 fork? If a 64-up fork is installed, the geometry difference would cause improper operation as well.
As asked, does the pedal stick to the floor with engine off, or only when at some high RPM?
This "pedal stuck to floor" is a common issue with replacement (correct)bent finger clutches on C1s. The ST-12 based clutch adjustment is critical, but sometimes requires some mods to the cross shaft/z-bar pivot hardware to correct when using these.
