    Can anyone direct me to a complete description of the adjustment of the choke including the dash pot.

      The 67 Chevrolet Chassis Service Manual - Section 6M - Engine Fuel should give you some useful outlines. It also refers to the Overhaul Manual Section 6M. The PV Manual will give you desired fast idle speeds.
