I have been trying to dial in my original 67 Holley carb. It was running too rich and idling too high. Got it to idle good and runs great however after shut off it sputters for a couple seconds. Too lean?

If you have an original model carb and OE equivalent L-79 camshaft, typical idle behavior is 14" @ 750 with a slight lope, mid-twenties degrees total idle advance (initial plus full vacuum), and the idle mixture screws should be about 1.0 turns out from the seat.
If you are saying the engine "diesels", otherwise known as "run-on" after you turn off the key it could be caused by too high idle speed or insufficient total idle advance that can be caused by a dead VAC, which increases combustion chamber boundary temperature that can result in auto ignition after you switch off the ignition.
