I think you could use either of the two greases you have and be fine. If it were me, I'd use the Mobil 1 synthetic.
The pivots were lubricated at St. Louis. Motor oil was used. The felt seal was saturated with the oil.In Appreciation of John Hinckley- Top

Re: Type grease head light pivots
Mobil 1 should work well, and since the base oils have lower volatility that conventional base oils the grease will remain functional longer.
I should also point out that grease has a shelf life. Over time the oil will separate from the solid "soap", which is often seen as a small pool of liquid oil at the top of the can, and there no real way to remix it in the field, so you should probably dispose of the bucket of grease you got from your uncle.
It's best to buy grease in small amounts and replace it at least every five years if it has not been used by then.

Re: Type grease head light pivots
My understanding is that GM "Lubriplate" is basically a NGLI #2 white lithium grease with a conventional oil base. In my experience it dries out very rapidly, which is why I prefer a synthetic base oil for "long life" lubrication jobs.
