Well said Pete, but one quibble. We in Northern New Mexico think our Chimayo variety chiles are the best. But they are rare and not commercially cultivated and distributed like the Hatch variety. But suffice to say, no other state or country produces chiles of the caliber of our New Mexico chiles, so perfect for bribing our way into Texas. I would suggest using a NOM big block car for roasting, I think you lose less points that way, no?
