What is the best reference to aid in removing the dash from a '68. I'm planning to use Just Dashes for the restoration. Anyone have any other recommendations? Thanks!

Are you taling about the upper or the lower dashes?? Recommend you watch ebay and get a good used one. What is wrong with your dash now.
Dash is a PITA to remove. If you do anything with the drivers side lower dash, you must lower the steering column or you will run the chances of breaking the substrate on the dash. They are fragile.
Remove the lower dash and then go after the upper dash. Nearly impossible to to get at the attachment bolts to remove the upper dash without breaking something. Go slowly. Terry- Top

I am in the process of doing all of my dash pieces on my '68. The best reference that I could find was to document the removal of my old pieces with my camera and a notepad, especially since I took mine apart over a year ago. Also, the 53-82 Corvette Parts & Illustrations Guide has some nice exploded views.
I found a lot of problems with my dash harness & had to replace it with one from Lectric Limited. You may want to replace the oil pressure line while you're at it.
Is Just Dashes going to restore yours? They told me that they didn't restore '68's & that I should call Corvette America for repro pieces. I ended up getting my 3 pads from Wilcox (drop shipped from Corvette America) at a much better price.

I checked Just Dashes' website and it looks like its listed on their reproduction applications page -
They did the dash for my '69 GTO and the work was top notch. I will call to confirm that they will do the vette.- Top

I would mark the positon of the column at the flexible joint and remove the column. Then I would remove the lower dashes being extremely carefull of the center small instrument bezel. As you are sitting in the car, you have to pull the top dash towards you to get it to slide out. It is bolted to a potmetal frame and the frame is bolted in the right and left corners by the windshield. There will be other stuff attached to the underside of the dash as well. Make sure you have a good color match from JD. I have never seen there work.

I must have talked to someone who wasn't too informed. I have seen their work on a friend's '67 'Stang, they do very nice work.
FWIW, I am very happy with the look & fit of the upper dash pad from C.A. I haven't put the gauges in the C.A. lower left pad yet.
I'm going to re-skin the original lower right pad, the backing is in great shape.
Please let me know how you make out w/ Just Dashes.
