Gents, does anyone know of a list of the options that could be bought on an 1970 LT1 knowing that some of the normal options were not avail. Is there a site that has this info?

All options which were available for the 1970 model year (which can be found in various sources) were available with the 1970 LT-1 except C-60 (air conditioning) and M-40 (THM-400 transmission). Curiously, the M-40 was available with 1970 Camaro Z-28's with the same LT-1 engine, but it was not available with LT-1-equipped Corvettes.
Some early 1970 LT-1 with "6 quart" oil pan (engine suffix code "CTU") were not available with N-40 (power steering).
There were more order restrictions when the LT-1 was part of the ZR-1 performance package. However, only 25 of those were built for the 1970 model year, so I presume that's not what you're asking about.In Appreciation of John Hinckley
