I believe that gloss black was the most common finish on these backing plates. However, it's possible that other finishes were used. In the "old days" GM used a LOT of these backing plates (although there may have been slight differences bewteen car models). In any event, there were likely multiple suppliers of them and there may have been optional finishes which the GM specifications provided for.

Although it would be a shame to "make the car original by making it non-original" (assuming that your backing plates were, indeed, originally some finish other than gloss black), I think that I'd go with the gloss black finish as you are contemplating. It's very durable, attractive, and it will be readily accepted for judging without controversy.
