I've driven my car a few times now, and the(rebuilt)engine runs at a normal temperature range, with no overheating. I've been adding coolant to the radiator as needed to keep it full. If a small amount comes out the overflow hose after I shut it off, does that mean I'm overfilling it?

The coolant needs some expansion space. Your owner's manual should tell you how to check the coolant level and the amount it should be below the filler, hot or cold - probably about an inch or two.
If you added a coolant recovery system, you could run the level at the top without an expansion space.
