Can't tell from the pictures whether shocks are installed. If they are not installed or if they are too long, the interference you describe happens.- Top

Lift (both) trailing arms to ride height. A 9/16" socket (1/2" drive) placed (width-wise) between trailing arm and frame will approximate normal ride height. With both trailing arms in ride height position you can check for potential interference.
(My guess, without shocks trailing arms can hang too low. )

Full shock extension is what limits rebound travel. That's the design. If the shocks are functionally correct there should be no U-joint grounding.
This is more of a problem on '63s that have cast half shaft drive flanges. Later forged drive flanges have a different design that allows more clearance, so it should not occur once the shocks are installed.
